A classic minestrone

 

Katie travelled around Italy and discovered this classic minestrone soup in a tiny town called…. Katie features this recipe in her book, Rome, that she wrote with Giancarlo.

Base: Onion, carrots, celery (sofrito).
Vegetables: Potatoes, courgettes, cabbage, green beans, tomatoes.
Legumes: Cannellini or borlotti beans.
Herbs: Basil, rosemary, thyme, bay leaves.
Liquid: Vegetable or chicken stock.
Pasta/Grain: Small pasta shapes or fregola.
Richness: Olive oil, Parmesan cheese rind for depth
