Description
The ultimate fish and seafood masterclass comes to our restaurant in Bray, Berkshire, with Giancarlo Caldesi and Gregorio Piazza.
Working with a variety of sustainably sourced fish and shellfish you’ll be shown how to source the best quality and what to look out for when buying fish.
Then it’s time to brush up on your knife skills and learn everything from descaling to pin-boning… and beyond. You’ll be shown how to fillet fish then prepare and cook squid and cleaning clams, to make some delicious Italian recipes that are bound to impress your family and friends and will make welcome additions to your culinary repertoire.
After the cookery you’ll then sit down as a team to enjoy your dishes with wine for lunch.

- Marinated carpaccio of black bream dressing with fennel & orange
- Deep fried calamari
- Slow-cooked calamari in tomato and chilli sauce
- Stefano’s pasta with clams
- Pancakes filled with crab in spinach sauce
- White fish stock
- Pan-fried Seabream ‘Saltimbocca’
